Description

A clean, delicate and sweet nano lot perfect as a filter coffee. Expect a different profile for Brazilian naturals with this Mundo Novo, slowly dried lot.

This is a Natural processed coffee. This dry process is considered the most eco-friendly coffee process, using little to no water, used for most of Mió’s microlots to increase the fruity and citrus aromas while retaining the sweetness in the cup.

Producer Information

Mió is a coffee farm in Monte Santo de Minas, Brazil, that exports, imports, stores, and sells coffee. Its 1,589 hectare coffee farm is nestled in the municipality of Monte Santo de Minas, Brazil, and includes coffee trees, processing and milling facilities, native forest reserve, some pasture areas and a plantation of eucalyptus trees (home to some lovely bees). The farm is located between the two distinct terrains of southern Minas Gerais and the high Mogiana region, each bringing different characteristics to Mió's coffee.The land is divided between a Eucalyptus tree plantation, pasture areas, a native forest reserve, coffee processing and milling facilities and the all important coffee trees.With a plentiful supply of spring water on the estate, one of Mió's responsibilities is to not only mainatin the water flow, but also improve water quality.

Mió pride themselves on a 100% traceability guarantee for the entire crop every year. Each stage of the journey, from where the cherries were harvested, which trucks moved them, how and when they were processed, is tracked using satellite imagery. Being a technology-driven farm improves the farmworkers’ quality of life, ensures an abundant harvest and guarantees the highest processing standards for the crop.

To date our Head Barista Aron has made over a million of coffees during his time, that’s a lot right? His dedication and skill has benefited coffee shops around the E.U., Canada, New York & his home city London.  In 2010 Aron started with a mobile espresso van which taught him just how difficult it can be to manage different bean densities in England’s inclement weather.  Determined to master the art of consistency, he spent days testing coffees from around the world, roasting different blends to formulate a recipe that would deliver a consistent base flavour within a temperature range of -5’c to 35’c.  Most coffee shops are fitted with air conditioning units which assist in maintaining that consistency, but without that luxury Aron’s understanding of the volatility of coffee grew considerably.

The business expanded in 2011 when both Aron and his wife, Clare, took on a failing coffee shop after the recession with aim to give it life.  With previous experience in hospitality and business management,  their dedication and hard graft paid off and The Espresso Lounge Tring is a successful coffee shop and cafe with several TripAdvisor awards and fantastic reviews.

They remain within this lucrative industry to date and can offer invaluable knowledge to new business start ups or those wishing to train their baristas to the highest possible standard.
